Emeril's Delmonico at the Venetian is my favorite. I've eaten there twice and would go tomorrow if I could. My favorite is the filet mignon which is the best I've ever had. I also love the special Emeril's shrimp as an appetizer.
If you like Asian food there's a restaurant at MGM Grand called Pearl that is another favorite of mine. They have a special menu for two peple that features a variety of delicious dishes that are different than the usual restaurant fare.
For fast food - eat at In-n-Out Burger and be sure to have one of their shakes.

My personal favorite is an old school choice... Circus Circus Steakhouse. It is a beautiful room which is in striking contrast to the rest of the casino. It is dark and quiet which is the polar opposite of everything CC is normally about.
The food is top notch, try the Filet Mignon. The wait staff is some of the best I have had in Vegas and the best part is it is still affordable. You can get a Filet for under $30 and it is a complete dinner with salad and potato. Most steak place in Vegas now bang you for $40+ for the meat and another $10 for mashed potatoes. Such a scam! I would suggest everyone give it a try at least once while in Vegas. You wont be disappointed if you like a good steak and great service at an excellent price.

Delmonico, it's Emeril's steak restaurant at the Venetian. I LOVE that place. Every time I think about the food, I want to drool!!! It's so worth it. The steak was cooked perfectly and melted in my mouth. The garlic smashed potatoes were OUT of this WORLD. Need I even mention the desserts? Oh to die for. I can't wait to go back!

I even have 2 favorites: a million - palms buffet: very low priced and incredibly scrumptious. the only place in Vegas that would desire to serve seafood pasta the way they make it in Italy, as an occasion. incredibly real dishes of all kinds and scrumptious. 2 - Studio B at M hotel: an excellent form of dishes, lots of which you would be able to constantly discover many which you will adore. Wow!

rob gave u a very good choice on the circus circus steak house, its definete old school las vegas! for something a bit newer try emerils "del;monicos" excellent seafoods, meat, ombience! pricey but well worth it, u better be a high roller to get in on a weekend

brian's beach on flamingo/durango for their dinner specials, or sushi on rainbow for their dinner specials. it's good, cheap and they give a lot so you have leftovers for the next morning. also, the melting pot's "big night out." soo good, but very expensive.
