Could we consume cheese after its expiry dates?

Normal processed food stuff were all stamped with expiry dates. It shall not be safe to consume them after these dates. I would like to seek expert's opinion to ascertain that cheese could be consumed even after their expiry dates as I think that cheese had undergone the complete fermentation process and their properties had been stabilised.

Any food experts there would throw some lights on this issue?

    I guess not because of bacterial presence.

    Umm really? You don't need a food expert to tell you. There's a reason the company puts a expiration dates on them. Because you'll get sick, I mean if the companies didn't have a federal law saying they did, those cheese companies would make way more money. Good luck!!!
