What's the best cooking utensil you have made or purchased?

Update:

B.. I agree that a sharp knife is a must. I was working for a catering company (using a dull knife) and cut through my thumb nail..six stitches...my boss quickly bought a knife sharpener..I do cook a lot, but am always looking for new utensils to add to my kitchen. I think my favorite addition so far has been the George Foreman grill.

The most important tool for any good chef is a good SHARP knife. Plus some sort of sharpening stone or steele so that you can freshen the sharpness frequently. Most chefs have a good assortment of knives that they use, but if you are starting out and can only afford one good knife, then you want to go with something that has a blade that is about 5-6 inches long with a sharp point on the end. Look for one with a well balanced handle that has the metal of the blade running all the way through the whole handle, not just the blade that starts at the handle.

You can use your regular tableware for just about every other function until you find gadgets that you like to use, but if you don't have at least one good sharp knife, you will hate cooking.

Spring loaded tongs. One with a long handle that is all stainless steel for the grill and another one with plastic tips for teflon coated pans in the kitchen. Tongs are great because they do not pierce the meat like a fork, which lets out the juices. Tongs are great for many uses, including grabbing a few strands of pasta to make sure it is cooked to perfection, flipping foods that are sauteed in a cast iron pan and are great for picking up fish fillets as well as tossing stir fry veggies.
