What's for dinner tnight? I'm making a hearty beef stew n homemade loaf of bread :)?

    Already had dinner (UK here - remember the time difference). I made chicken chow mein, basically because I had half a pack of stir-fry vegetables left and they needed using up. (Family joke - my late Dad was always saying "eat it up out the way!" Always gets a laugh if I, my Mum or my sister mention it. Well, he and Mum remember WWII rationing when it felt like a crime to waste food.)

    I live on my own so actually making it from individual different vegetables is impractical but I like it... so it's half a ready chopped stir fry pack, one diced chicken thigh fillet from the pack I bought this morning, stir fry those, meanwhile cook the noodles, add the drained noodles when the stir-frying is done, add the mix of soy sauce, cornflour and chicken stock and warm the whole lot through. Tip on to a warm plate and eat (with a fork - I've never quite worked out how you're supposed to eat noodles with chopsticks).. One of the quickest dinners I know.

    Talking of beef stew, I love that too and I still have a portion in the freezer from my last batch. Yet another thing that doesn't work to just make one portion so when I have the time I make enough for four, let the other 3/4 cool down, portion it out into freezer bags when it's cold and freeze them. When I want stew, defrost a bag, empty it into a pan, make dumplings while it heats up, and cook them in the reheated bubbling stew for 20 minutes.

    i'm having tofu which is marinating in ginger,chilli and dark soy - with steamed cauliflower, sweet potato, capsicum and brussel sprouts

    It is Australia day today so it will be a typical Australian dish but I haven't decided yet
