Did God create the Coronavirus or did the coronavirus evolve (mutate into a different strain)?

Not at all. God is far from evil. He tried to make things the best for us but failed at it.

It has existed in certain animal species for a very long time.

There's no practical distinction between those alternatives. 

Corona virus mutated to adapt to birds, then some mammal, then humans. It continues to mutate, which is why a cure is so elusive.

He sends his apologies for all of the collateral damage,

Family of coronaviruses existed for centuries.They are basically evolved just like us and anything else alive.If you are talking about current strain, it was created in wuhan lab and somehow escaped it.
