Are businesses with "no shirt, no shoes, no service" signs an attack on individuality and an attempt to make people conform? 

No more so than driving on the right side of the road is.  It's a rule/law for public safety.

It's about keeping you and those around you safe.  I get it, nobody likes to be inconvenienced.  We live in a "Me First!  Me me me!"  society.  There will be times when we're asked to do things we don't like.  Get used to it.

No, it's an attempt to curb the spread of a deadly disease. No one is forcing you to wear one inside your house. You might as well say the same thing about laws that require us to wear clothes in public. Do you consider that oppressive as well?
