Disney world budget for 2?

If you're eating off-property, maybe a few hundred dollars. Of course, with all of the lay-offs and business closings going on around here (I live in the Orlando area, so I know of what I write), you may be limited in your choice of restaurants.

property or off?  Really depends on what type of meals you will be eating - counter or table service and how many meals in WDW

You need to work out how much fuel you'll need for the drive and add enough for your food (as you eat so little, you could get 'snacks', child's meals or just share with your husband) which you can estimate by searching online for menus and prices at all four parks).

Assuming that you only budgeted for the plane trip and nothing else. At least 2000 for a package deal which includes hotel, food, and tickets to the parks. The fancier the resort, the more expensive it gets.

The resort is expensive but it’s more convenient since everything is nearby. You can go to the cafeteria if you want a late night snack or you can sit on a bench at night just to take in the fresh air. There are convenience stores if you need toothpaste or aspirin or a snack.  You overpay but that’s common knowledge. 

Honestly you'd have to look into ticket prices yourself because they do vary, and I dunno where you live so I can't factor travel or hotel/resort stays into it. I can, however, give you this advice for saving money:

Do not buy ANYTHING at the park. Seriously. You're allowed to bring your own food and water, so absolutely do so. Get a bag, pack some sandwiches or whatever. Bring your own ponchos/umbrellas and whatever else you can think of. Nalgenes are your friends.
