Most were shot with a Hasselblad film camera,,different films produce different prints.

with color film, what you see is the color it is. Just like you were there seeing with your own eyes.

Earth is the only object in view that has color. Space is black. The moon is grey.

The photo was taken at night on the Moon.   The color Earth was added to the photo using photo compositing techniques for the time.

The whole picture is in color;  but the moon - and space - are devoid of color, essentially just shades of gray.  So, Earth shines like a jewel in the blackness....

The photo (the link you give) clearly shows a faint tinge of green for the Moon. This is due to the mineral olivine, which is almost grey, with a slight tinge of green.  Otherwise, the Moon is almost pure grey (12 to 18% reflection) -- The closest common thing with the same properties, for most of us, is a freshly-paved asphalt parking lot.

The moon's surface appears black and white because there is no atmosphere to soften and scatter the blue wavelengths of light.

The Earth appears blue because its atmosphere scatters the blue wavelengths of light (that is why we see a blue sky).

Can you give more detail in what you’re asking?  They had colored film and could send information back from how close the moon is to the planet but most people still owned black and white televisions so a lot of films that recorded it happening recorded it in black and white.
