Is lime good with potato salad?
Worried about the acidity, and how it might take away from the creamy texture.

crumbled bacon always good or chopped chives, lime will add flavor,

Not only is this change-of-pace salad good served cold, but it is absolutely fantastic when it's warmed a tad. The recipe came from my mom, who likes to use lime juice and lime peel for a unique flair.
Prep/Total Time: 30 min. Yield: 5 Servings 15
Ingredients
4 cups cubed red potatoes
1/3 cup reduced-fat mayonnaise
1/4 cup reduced-fat sour cream
2 tablespoons lime juice
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon grated lime peel
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until potatoes are tender. Drain. Cool potatoes for 10 minutes; transfer to a large bowl.
Meanwhile, in a small bowl, combine the mayonnaise, sour cream, lime juice, thyme, lime peel, salt and pepper. Pour over potatoes; toss gently to coat. Serve warm or chilled. Yield: 5 servings, 3/4 cups per serving.
Nutritional Analysis: One serving (3/4 cup) equals 158 calories, 6 g fat (2 g saturated fat), 10 mg cholesterol, 376 mg sodium, 22 g carbohydrate, 2 g fiber, 3 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fat.

ingredients
2 pounds fingerling potatoes, cut into 3/4-inch chunks
2 avocados
2 tablespoons lime juice, from a lime or two
1/2 teaspoon salt
1/4 teaspoon ground cayenne (optional)
1 plum tomato, chopped
1 small red onion, diced small
1 small cucumber, diced very small
directions
1. Put the potatoes in a pot and cover them with water. Cover the pot and bring the water to a boil. Lower the heat to a rolling boil and cook for 15 to 20 minutes, until potatoes are easily pierced with a fork. Drain and set aside to cool.
2. Once the potatoes have cooled, prepare the dressing. Split the avocados in half, remove the pits, and scoop them into the food processor. Add the lime juice and salt and puree until smooth, scraping down the sides with a spatula as needed. Once smooth and creamy, add they cayenne (if using), tomato, and onion. Pulse until they are incorporated but not completely blended. You should still be able to see the tomato and onion.
3. Put the potatoes and cucumbers in a large mixing bowl and mix them up. Add the avocado dressing and mix well. Taste for salt. Chill until ready to use.

Prepare this as close to serving time as possible. It can sit for a couple of hours, but anything longer and the avocado will brown.

I think adding lime to potato salad would be a delight for your taste buds. You can use mushrooms, corns, thyme (dried or fresh) and broccoli as toppings for your salad!

I think lime would be just fine. I love my potato salad any way.

I always add a little vinager to my mayo based Potatoes salads. Then garnish with a little parsley.
